Adana looks simple: seasoned meat on a skewer. Making it is not. The meat has to hold onto a wide skewer all the way through grilling, without sagging or falling off.
That comes down to how the mince is prepared before it ever reaches the skewer, and to the hands that shape it, one skewer at a time. It is one of the hardest kebabs to get right, and the one we are proudest of.

Our Adana is a mix of lamb and beef, prepared in our kitchen.
The amount of fat is chosen carefully. It is what keeps Adana juicy, and it decides whether the kebab holds on the skewer. Too little and it turns dry; too much and it will not hold. Get it right and you get what Adana is known for: juicy, and very tender.

An ancient recipe, known in Turkey as Adana and in the Caucasus as lula kebab.
Recipes differ a little from kitchen to kitchen, but the taste is always the same: juicy and very tender. At Aladdin Grill we make it by our own recipe, at our restaurant in Santa Rosa and at our food truck in Sonoma.

Plate: with basmati rice, tomato, jalapeño, salad, bread and garlic sauce.
